Ingredients:
- Third of a cup of vegan margarine
- Half (1/2) c. of sugar
- Two (2) c. of flour
- One and a half (1 1/2) tsp. of baking powder
- 1/2 tsp of bicarbonate of soda
- 2 ripe saba bananas, mashed
- 1/2 c of soy milk
- 1 tsp of vanilla
- Half (1/2) c. of thinly chopped cashew nuts
Preparation:
- Set the oven to 350 degrees F.
- Cream together the vegan margarine (or vegetable oil) and sugar; then stir in the flour, baking powder and sodium bicarbonate.
- Add the leftover ingredients and mix well.
- Pour the batter into a lightly greased loaf pan and bake for approx. one (1) hour or simply ’til the cake springs back when gently touched.
- Remove the pan from the oven and cool for about 10 minutes.
- Remove the bread from the bread loaf pan and allow it to cool completely on a wire cooling rack.
- Once the cake is completely cooled, apply some Avocado Frosting for a delicious combination of taste and texture.
Avocado Frosting
Ingredients:
- Eight ounces of avocado meat (approximately two small to medium avocados)
- 2 tsp of lemon juice
- One pound of sifted confectioner’s sugar
- Half a teaspoon of lemon extract
Preparation:
- Peel and pit the avocados, then mash the meat.
- Take the avocado meat in a large bowl with the lemon juice and beat ’til it becomes creamy and lightened in color (about three (3) minutes).
- Add the sifted confectioner’s sugar, 1 teaspoon at a time, and beat till smooth.
- Add the lemon extract and continue mixing to combine all the ingredients completely.
- Spread evenly on top of the Vegan Banana Bread.
